Milk chocolate and brioche bread yield an amazingly decadent bread pudding. Served warm, this is the ultimate sweet and creamy treat.
4 eggs, lightly beaten
1 cup brown sugar
3 cups heavy cream
1 cup milk
1 tsp. vanilla extract
6 cups brioche bread, 1 day old
9 oz. milk chocolate, coarsely chopped
1⁄2 cup dried cherries, reconstituted
1 cup ginger crème anglaise
- In a large bowl, whisk together eggs, sugar, cream, and milk. Add vanilla, bread, chocolate, and cherries, and mix well.
- Pour into buttered baking pan (10 X 14) and bake until firm, about 1 hr.
- Allow pudding to cool slightly, cut into squares and serve with ginger crème anglaise.
