Smoked turkey, pepperjack cheese and chipotle ranch combine to create a must-have wrap for the students at Union Public Schools in Tulsa, Okla.
1 12-in. tortilla
2 tbsp. chipotle ranch dressing (recipe follows)
1 cup shredded lettuce
½ cup diced tomatoes
8 slices smoked turkey breast
2 slices pepperjack cheese slices
Chipotle Ranch Recipe
Yield: 3 qt. + 8 oz.
1 7-oz. can chipotle peppers in adobo sauce
3 qt. Hidden Valley Ranch
1 small lime, juiced
1 tsp. cumin powder
1 tsp. chili powder
1. To make Chipotle Ranch: Blend chipotle peppers in food processor for 5 minutes. Strain peppers through mesh strainer and add back to food processor. Add remaining ingredients. Blend for 3 minutes. Refrigerate.
2. Place tortilla on work surface; spread 2 tbps. Chipotle ranch dressing on 2/3 of tortilla. Put 1 cup lettuce and ½ cup diced tomato across center of wrap.
3. Top with 8 slices of smoked turkey and 2 slices of cheese. Roll wrap burrito style then cut in half diagonally.
4. Wrap each half in plastic wrap and hold at 40°F or below until ready to serve. Note: Customers have their choice of vegetables, including fajita-style options, with this recipe.
