This breakfast in a glass is blended with ripe avocado, fresh spinach, Greek yogurt and protein powder for a nutritious and portable way to start the day. Blueberries add visual appeal and balance the richness of the avocado.
1/2 cup unsweetened coconut milk (or almond milk)
1/2 ripe avocado, pitted and peeled
1/4 cup vanilla Greek yogurt
1 scoop vanilla protein powder
1 cup fresh spinach leaves
2 tbsp. agave nectar
1 cup crushed ice
2 tbsp. fresh blueberries
1. In a blender, combine coconut milk, avocado, yogurt, protein powder, spinach, agave nectar and ice; blend on high speed until smooth.
2. Pour shake into glass and garnish with blueberries. Serve with a straw.
