“We offer this sandwich monthly and it sells out almost every time,” says Executive Chef Cameron Clegg. “Like [Pittsburgh’s] three rivers we have incorporated three rings of ‘fire’—smoky tomato mayo, smoked turkey breast and our locally sourced smoked Gouda cheese.
I love using a panini press or a flattop griddle for this.”
Ingredients
2 loaves Asiago ciabatta
1/2 lb. shaved smoked turkey
8 oz. shaved smoked Gouda
2 cups fresh arugula
1 cup smoky tomato mayo
Smoky Tomato Mayo
1 cup mesquite wood chips
4 tomatoes
2 cloves garlic
1/2 cup low-fat mayonnaise
1 tsp. kosher salt
1 tsp. cracked black pepper
Steps
To build sandwich
- Slice open bread and brush with dressing.
- Divide cheese, turkey and arugula and add to sandwiches.
- Toast sandwich until cheese is melted and bread has a golden brown crust.
Smoky Tomato Mayo
- Smoke tomatoes and garlic with wood chips. Discard chips after use. Allow tomatoes and garlic to cool.
- Blend tomatoes and garlic with remaining ingredients, using hand immersion blender.
- Season dressing to taste.
