Returning to the classics—pizza style

With today’s culinary scene filled to the brim with innovation and experimentation, I often find myself needing a break from what’s new and being drawn to re-discovering classic dishes. Some call this “comfort food” while others dub the dishes “retro,” but the common themes are simplicity and craftsmanship. At Bertucci’s it’s the Margherita pizza: five ingredients kissed by the brick oven. The signature crust, homemade pomodoro sauce, fresh mozzarella, basil and olive oil—It’s a timeless combination that when done right, can’t be beat. With a cold Peroni or glass of Sangria, it’s my summertime go-to dinner.
