Chemistry: The key to baking

Accuracy in mixing the exact measurement of ingredients is the key to baking.

This is where Chemistry 101 back in high school comes in handy. Blend together calcium acid phosphate and alkali (sodium bicarbonate, also known as baking soda) to produce baking powder. Add water and carbon dioxide is produced. Heat this concoction to make cakes rise. And you thought you'd never need to remember your chemistry. Well think again.

Baking demands both science and art. Once you have mastered the science, you can experiment with the art. Add a bit of this and a dash of that to invent signature delicacies. Mix-in a variety of ingredients to alter the basic formula and create your own works of art. So break out your safety goggles, flask, and bunsen burner: We are going to bake!
