e-Tools: Big Ideas for Burgers


A new Web site published by the Wisconsin Milk Marketing Board, www.cheeseandburger.com, offers ideas for creating specialty cheeseburgers, from somewhat traditional to off-the-charts outrageous. Check it out. You just might get inspiration for menu-building or daily special ideas to take to customers. The site, designed like a virtual recipe Rolodex, presents a photo of each burger, an ingredient list and information on the cheese used on the burger. DSRs should take it a step further to figure food costs and suggested menu prices before taking big new ideas to customers.

Here’s a sampling of burgers featured on the site:
•    The Johnny Appleseed. Beef patty, aged cheddar, maple bacon, sautéed apples, sautéed onions and whole-grain mustard on sourdough loaf.
•    The Mama Mia. Beef patty, mozzarella, pepperoni, sautéed button mushrooms, sautéed onions with pizza sauce on crusty Italian loaf.
•    The Pilgrim. Ground turkey patty, baby Swiss, Portobello mushroom puree, fresh thyme, roasted red pepper aioli, bacon, arugula and avocado on a whole wheat bun.
•    The Brooklyn. Beef patty, Swiss cheese, corned beef, sauerkraut and Thousand Island dressing on grilled dark rye.
•    The Mona Lisa. Beef patty, gorgonzola, sun-dried tomatoes, pancetta, Sicilian olives, sliced red onion, arugula and garlic mayo on toasted olive ciabatta.
•    The Southern Belle. Beef patty, gruyere, BBQ sauce, pepper slaw, pickle spears and sliced white onions on grilled sourdough.
