Can a restaurant chain focused on healthy eating work nationally? We’re about to find out, thanks to the Oprah-backed concept True Food Kitchen.

This week’s episode of RB's podcast, "A Deeper Dive," features Christine Barone, CEO of 26-unit True Food and a former Starbucks executive who helped bring food to that chain’s more than 12,000 coffee shops.

True Food’s backers include private-equity firm Centerbridge Partners and highly regarded restaurateur Sam Fox. The chain’s menu follows the anti-inflammatory principles of Dr. Andrew Weil, and was founded by Fox and Weil in 2008.  

Barone is working to take its concept nationwide. She talks on the podcast about the challenges the company will face as it expands, but also the opportunity in the market. She also talks about what it takes for a healthy concept to truly lure customers.
