Mary Nguyen Aregoni is chef-owner of Saigon Sisters, a popular Vietnamese restaurant in Chicago. Watch as she prepares Green Papaya Salad, a classic dish from her home country that makes for cool summer eating. It combines shredded unripe papaya with a dressing of fish sauce, lime juice, sugar, Thai chiles and garlic. In the restaurant, Chef Aregoni serves the salad with shrimp, pork belly, beef jerky, shallots and peanuts.
