4 cups CATTLEMEN’S® Carolina Tangy Gold Barbecue Sauce
8 Chipotles in adobo, finely chopped
3 ¾ lbs. Lime juice
9 cups Sliced red and green bell peppers
9 cups Sliced onions
2 Tbsp. Chopped cilantro
Flour tortillas, fajita size As needed
3 cups Salsa
3 cups Sour cream
- To make the marinade and basting sauce, combine Gold, chipotles and lime juice. Reserve 2 1/2 cups for service.
- Cut skirt steak into 5 oz. portions and marinate, refrigerated, 3 hours to overnight.
For each serving, grill one portion skirt steak to desired doneness, basting with 2 tbsp. reserved sauce as the steak cooks. Let rest then slice thinly on a bias. As steak is cooking, sauté 3/4 cup peppers and 3/4 cup onions over medium high heat until nicely browned, then add 2 tbsp. reserved sauce and 1/2 tsp. cilantro. Serve sliced steak and peppers and onions on a sizzling platter with warm flour tortillas, 1/4 cup salsa, 1/4 cup sour cream.
