Citrus and Kiwifruit Ceviche

Citrus Ceviche

A flavor explosion is the result of this sweet and spicy ceviche made with salmon, shrimp, scallops and whitefish as well as green and gold kiwifruit, and lime and orange segments.


1⁄2 lb. shrimp, cooked, cubed
1⁄2 lb. fresh salmon, cubed
1⁄2 lb. scallops, cubed
1⁄2 lb. whitefish, cubed
1⁄2 cup diced red onion
1 tbsp. diced green jalapeño
1 tbsp. diced red jalapeño
1⁄2 tsp. red pepper flakes
2 cups fresh lime juice
2 tomatoes, seeded, diced
1⁄2 cup chopped cilantro
2 tbsp. sugar
Salt and pepper, to taste
2 green kiwifruit, peeled and diced
2 gold kiwifruit, peeled and diced
2 limes, peeled and segmented
1 orange, peeled and segmented


1. In large bowl, combine shrimp, salmon, scallops, white­fish, red onion, jalapeño peppers, red pepper flakes, and lime juice. Refrigerate 2-3 hr.

2. Just before serving, drain off excess lime juice. Stir tomatoes, cilantro, sugar, and salt and pepper into seafood mixture. Care­fully add in the kiwifruit and lime and orange segments; gently mix.
