Crab Stuffed Potato Skins

Potato skins are a favorite appetizer. This version stuffed with crab and oozing with melted cheese is especially delicious.
4 baking potatoes, medium
1 lb. crab meat
6 oz. mayonnaise
3 green onions, chopped
1/2 cup of cracker crumbs
Salt and pepper to taste
Shredded Cheddar cheese (optional)
Sour Cream (optional)
- Bake the potatoes until done. Cut off the top third of the potato and scoop out. Brush potato shell with garlic oil and bake ( or deep fry ) until crisp.
- In a large mixing bowl, combine crab meat, mayonnaise, green onions, salt and pepper. Spoon mixture into potato shell.
- Sprinkle cracker crumbs on potatoes and Cheddar cheese (optional).
- Bake at 350 degrees for 10 minutes. Serve with a side of sour cream (optional).
