Honey and Spice Butternut Squash Soup
A steaming bowl of this creamy soup is satisfying and delicious. The delicately sweet flavor of the squash is enhanced by the fragrant cumin and spicy pepper.
2 lb. onion, chopped
2 oz. unsalted butter
6 large garlic cloves
6 lb. cooked butternut squash, cubed
2 qt. + 1 cup chicken or vegetable stock
1 tbsp. cumin, ground
2 teaspoons salt
1⁄8 tsp. cayenne pepper
2 cups heavy cream
1 1⁄2 cups honey
3⁄4 cup sour cream
2 tbsp. cilantro, chopped
1. Sauté onion in butter until soft; stir in garlic and squash.
2. Add stock, cumin, salt, and cayenne pepper. Simmer until squash is very soft.
3. Puree. Mix in cream and honey.
4. Garnish with a dollop of sour cream and 1⁄2 tsp. cilantro.
