Indian-Spiced Chicken Kebabs
Aromatic and mouthwatering chicken kebabs are served on a bed of tumeric scented rice. Mint chutney mellows out the flavor of this spicy chicken dish.
2 tbsp. cumin
2 tbsp. cardamom
2 tbsp. garam masala
8 tbsp. plain yogurt
1 tbsp. olive oil
1 1⁄2 tsp. garlic, minced
1 cup mint leaves, chopped
2 tsp. fresh ginger, chopped
1 green chile, minced
3 lb. chicken breasts, cut into 1-in. pieces
1 tbsp. lemon juice
2 tbsp. plain yogurt
Salt and pepper, as needed
Turmeric scented rice, as needed
- Combine marinade ingredients and add to chicken pieces. Cover and refrigerate 3-4 hr. or overnight.
- In a food processor, combine chutney ingredients and mix until combined.
- Place 3-4 pieces of chicken on a bamboo skewer leaving about 1⁄2 in. between pieces.
Grill until done, about 8-10 min. Serve 2 skewers on turmeric scented rice with mint chutney on the side.
