At True Food Kitchen, a concept with the tagline “great tasting food that’s good for you,” seasonality is a top priority. This vibrant salad highlights two of summer’s best: watermelon and tomatoes. The recipe takes advantage of the fact that fruits and vegetables at their seasonal peak boast the most flavor.
2 organic watermelons, peeled and cut into chunks
8 local heirloom tomatoes of various colors, cut into chunks
24 mint or basil leaves
2 tbsp. red onion, sliced paper thin
4 tbsp. extra virgin olive oil
2 tbsp. white balsamic vinegar
Coarse sea salt, to taste
Pepper, to taste
Crumbled feta cheese, optional
- Arrange watermelon and tomatos on serving plate or in bowl. Sprinkle with mint or basil and red onion.
- Drizzle with olive oil and vinegar. Season with salt and pepper to taste and sprinkle feta cheese on top, if desired.
