The two pieces of equipment I'm most excited about these days are my immersion circulators, which allow me to cook sous vide, and the combi oven. Both enable us to use cooking techniques that maintain the purest flavor of an ingredient. We can draw out the true essence of a food and maintain a high level of its inherent nutritive value.
