When customers order rack of lamb or roast duck, we carve both tableside on a specially equipped cart. We also present  Dover sole on the heated cart and have our expert waiters fillet it in front of the guests. Tableside presentation creates excitement and drama in the restaurant. Plus, once you slice meat and poultry in the kitchen, the juices are immediately released. Carving tableside preserves the juices and results in a tastier dish.
