Roasting fall vegetables on the grill

I’m really into my Viking grill this time of year. I use it for roasting all of those fall root vegetables that we have now in the farmers markets. We have parsnips, three colors of carrots, squash and beets. To me they are so earthy. If you sprinkle them with a little salt and pepper, olive oil and rosemary, you can do anything with them.
