From new spins on traditional flavors to new-school benefits, restaurants are redefining the norm this month.
1. Sweet on miso
The savory fermented soybean seasoning is making its way into desserts. Mud Hen Water in Honolulu offers a miso-butterscotch rice pudding; Top Knot in Dallas serves it in ice cream; and Makoto in Bal Harbour, Fla., makes a yuzu miso with chocolate, sake and ice cream.
2. Family matters
New parents may be seeing more benefits. In 2017, Danny Meyer’s full-timers will receive their entire base wages for the first four weeks after childbirth and 60% for four weeks following. Cava Grill adopted paid parental leave this summer. And the Washington, D.C., City Council is set to vote on the Universal Paid Leave Act by mid-month.
3. Seasonal sodas
Proprietary lemon-lime soda beverages are popping up at chains this month. Krystal is offering a holiday lemon-lime soda with cranberry blends; White Castle has menued a seasonal Cranberry Spritzer with Sprite; and Bubba Gump rolled out its Fall Freeze, a frozen drink with pineapple juice, lemonade, apple juice and Mist Twist.
