Dos Carne Grilled Flatbread with Lamb Ham and Lamb Pastrami

Pastrami and ham made from lamb instead of beef and pork is a newer to foodservice. Chef Michael Slavin of Houlihan’s uses the shaved lamb deli products to create a unique pizza for meat lovers.
1 oval flatbread (11- by 6 ½-in.)
3 tbsp. tomato sauce
½ cup shredded pizza cheese
1 oz. agave rosemary lamb ham, shaved and fluffed
1 oz. lamb pastrami, shaved
1 tsp. grated Parmesan cheese
Pinch crushed red pepper flakes
- Brush flatbread with olive oil; place on hot grill. Grill both sides and remove.
- Preheat convection oven to 375 F. Top grilled flatbread with tomato sauce, pizza cheese, fluffed ham and pastrami and Parmesan. Build so lamb ham and lamb pastrami are in the center of the flatbread.
- Bake with high fan for 4 minutes; serve.
