Chef Jeffrey Quasha of Morrison Healthcare jumps on the toast trend with a topping of fruit, cheese, honey and crunchy seeds. The healthy combo makes a satisfying morning or afternoon snack.
1 cup butter
24 slices Texas-style bread
2 1/4 lb. fresh mango, peeled and sliced
1/2 cup honey
1 1/2 lb. fresh mozzarella, sliced
1 1/2 cups pumpkin seeds
- Brush melted butter on bread and place in 350 degree oven. Toast 3 to 4 minutes, or until toast is golden brown. Remove toast and set aside for service.
- Per order, on each slice of toast layer 2 slices mozzarella, 3 to 4 mango slices, 1 teaspoon honey and 1 tablespoon pumpkin seeds. Serve immediately.
