North African Short Rib Tacos

These tacos filled with flavorful short rib and spiced couscous are sure to be a crowd-pleaser.
Ingredients
1/8 tsp. Turmeric, Ground
1/8 tsp. Peppercorn
1/8 tsp. Cumin, Seeds
1/8 tsp. Onion Powder
2 2/3 tbsp. couscous, Pre-cooked
3 oz. Hormel® Firebraised™ Beef Short Rib
1 tsp. Olive Oil
2 2/3 oz. short rib jus
1/8 tsp. arrowroot
1/8 tsp. Salt, Kosher
1/8 tsp. spice mix
2 2/3 tbsp. Water
1 1/3 tbsp. sundried turkish apricots
1 each Tortilla, Corn
Steps
- Pre-heat oven to 325 degrees.
- Toast all spices and then grind in grinder.
- Open 1 packet short ribs, set aside jus.
- Cook short ribs in oven for 20 minutes.
- Bring water to a boil and add couscous, cover and turn off heat - let sit for 10 minutes.
- Grill tortillas.
- Add spice mix and olive oil to cous cous.
- Remove short ribs from oven, rest for 10 min.
- Compile tacos.
