Red Onion, Tropical Fruit and Avocado Salsa

This salsa is a fruity take on the traditional, combining pineapple, mango, papaya and avocado with the more common ingredients of tomatoes, onions, chilies and cilantro. All the fruit and vegetables should be diced small. Keep the salsa on hand to give tacos and grilled chicken or pork a healthy twist, or serve as is in a lettuce cup for a side salad.


4 avocados, peeled and diced

1 mango, peeled and diced small

1 cup diced fresh pineapple

1 cup diced fresh papaya

1 cup diced tomato

½ cup chopped cilantro

2 med. red onions, chopped

1 red serrano pepper, minced

1 tsp. minced fresh garlic

¾ tsp. salt

½ tsp. ground cumin

1/8 tsp. ground black pepper

1 lime, juiced


1. In bowl, combine avocados, mango, pineapple, papaya, tomato, cilantro and onion. Add serrano pepper, garlic, salt, cumin, black pepper and half the lime juice; toss gently. Let rest 30 minutes for flavors to blend.

2. Taste and add additional lime juice, if needed.
