At The Porch at Christie’s in Westport, Conn. all the prep is done ahead and the staff makes bowls to order in no more than 30 seconds. The ingredients for the customized bowls are all displayed and kept warm in front of the guests to speed decision making and prep.



8 oz. cooked brown rice

3 oz. cooked or canned and drained black beans

6 oz. pulled pork

¼ cup + 1 tbsp. cubed, roasted sweet potatoes

¼ cup + 1 tbsp. grilled corn kernels

1 oz. apple butter barbecue sauce

1 oz. smoky crema

1 tbsp. sliced scallions



1. Place rice and beans in the bottom of a shallow bowl; mound pulled pork next to the rim of the bowl.

2. Mound roasted sweet potatoes to the right of the pork, then the grilled corn to the left.

3. Drizzle barbecue sauce over pork; drizzle crema over black beans and corn. Sprinkle scallions on top.
