Turkey Meatloaf

Cut down on the fat in normal meatloaf by substituting turkey. Marinara sauce keeps the leaner dish from drying out.


10 lbs. ground turkey
14 whole eggs
3 cups diced red onion
3 cups diced green bell pepper
1/2 cup minced fresh garlic
1/2 cup chopped fresh parsley
12 cups panko breadcrumbs
8 cups divided marinara sauce


  1. Preheat oven to 325° F
  2. Place all ingredients except 4 cups of marinara into large mixing bowl; mix until well combined.
  3. Place mixture into baking pan. Form into two equal loaves that run the length of the pan.
  4. Cover with plastic wrap, then with aluminum foil.
  5. Place into preheated 325° F oven and bake for 45 to 55 minutes, or to an internal temperature of 165° F.
  6. Remove meatloaf from the oven; uncover and top with remaining marinara sauce.
  7. Increase oven temperature to 400° F, return meatloaf to oven and bake uncovered for additional 10 minutes.
  8. Remove meatloaf from oven; cut crosswise into half inch slices; serve hot.
