A unique twist on the traditional Mexican Horchata, this version features toasted walnuts as well as rice to create the refreshing, milky drink.
Ingredients
8 tbsp. white rice
1 cup walnuts, toasted
1/2 tsp. ground cinnamon
Grated zest of half a lime
3 cups hot water
3 cups cold water, divided
1 1/4 cups sugar
1 tsp. vanilla extract
Steps
- In blender container, place rice; process until thoroughly until pulverized. Transfer to large bowl or pitcher, add walnuts, cinnamon and lime zest. Add hot water; cover and let stand at room temperature or overnight.
- Transfer mixture to blender; blend until very smooth. Add 2 cups cold water; blend again until thoroughly combined.
- Line strainer with cheesecloth and set over large bowl. Slowly pour rice mixture into strainer; allow liquid to drain into bowl. Slowly press as much of the solids through the strainer as is possible.
- Transfer liquid to pitcher; stir in remaining 2 cups cold water. Add sugar and vanilla; stir well. Cover and refrigerate until thoroughly chilled.
