Apple Beignets

Beignets are delicious little donuts. Beer and apples in the batter make them delectable. A cardamom sugar coating takes them over the top.
Ingredients
Beignet Batter:
1 egg yolk
8 oz. light beer
3 tbsp. canola oil
2 egg whites
1 cup flour
1⁄2 tsp. salt
6 gala apples
4 cups canola oil, for frying
Cardamom sugar, as needed
Steps
- Whisk egg yolk and beer together with oil. Whip egg whites to a hard peak, and combine all batter ingredients. Let rest one hr.
- Peel and core apples, cut into sixths, and dip in batter. Drop into oil and turn once, frying until golden brown.
