Apple, Walnut and Blue Cheese Salad

Chef John Graziano balances the sweetness of apples and honey with peppery arugula in this salad. Blue cheese adds a salty creaminess and the toasted walnuts bring a nice crunch for a contrast of flavors and textures.
Ingredients
3 tbsp. honey
2 lemons
1 cup sliced Pink Lady apples
1 cup sliced Green Delicious apples
2 cups arugula
½ cup toasted walnuts
½ cup crumbled blue cheese
Steps
1. Mix juice of two lemons with honey.
2. Toss all ingredients together.
