The addition of caramel sauce makes this hot chocolate a take on dulce de leche.
3 1/4 cups unsweetened cocoa powder
7 1/2 cups granulated sugar
1/2 tsp. kosher salt
3 1/3 cups boiling water
9 qt. half-and-half
5 cups whole milk (can use 2%, 1% or fat free)
2 3/4 tbsp. vanilla extract
1 tsp. of caramel sauce for each serving
- Combine cocoa, sugar and salt in hot saucepan; blend in boiling water. Bring mixture to a light boil while stirring. Add half-and-half and milk; heat until hot (do not let it boil). Remove from heat; add vanilla.
- Pour mixture into pitcher to serve.
- Add caramel to each mug and top with hot chocolate. Finish with housemade marshmallows or your favorite toppings.
