A ham and egg sandwich made even better with the addition of pesto. Cheese is added and the sandwich is broiled to golden perfection.
16 slices white bread
5 tbsp. butter
6 tbsp. Dijon mustard
8 slices black forest ham
Salt and pepper
1 dozen eggs, scrambled
1⁄2 cup pesto
8 oz. Gruyère or fontina cheese, shredded
- Spread 8 slices of bread with butter and mustard. Warm ham and place one slice over each piece of bread. Season generously with salt and pepper.
- Top each sandwich with scrambled eggs, salt, pepper, 1 tbsp. pesto, and remaining slice of bread.
Top each sandwich with 1 oz. cheese and broil until top is bubbling and golden. Season and serve immediately.
