Dark Side of Strawberry

This rosy mocktail pairs well with both savory and sweet dishes. For those who want a little buzz, the drink can be spiked with an ounce of Aperol to make a low ABV cocktail.
1 strawberry, crushed
¾ oz. lemon juice
1 oz. buckwheat honey
1 tsp. balsamic vinegar
2 oz. club soda or seltzer
Whole strawberry, for garnish
- In cocktail mixing glass, muddle strawberry with lemon juice and honey. Top with ice and shake vigorously.
- Add club soda and strain into iced glass. Garnish with a whole strawberry
