Taste of the Tropics Mango Wrap

A wrap is a kid-friendly vehicle for trying out new ingredients and flavors, and custom-building the combinations. Chef Susser pairs chicken with sweet mango, crisp lettuce and tart yogurt, but customers can choose another protein to personalize their wrap.
Ingredients
7 ripe mangos, peeled and pitted, divided
6 cups Greek yogurt
1 1/2 tsp. ground cumin
Pinch cayenne pepper
1/2 cup olive oil
1/4 cup fresh lime juice
1 tbsp. garlic powder
1 1/2 tsp. kosher salt
3 3/4 lb. boneless, skinless chicken breasts, cooked and sliced
6 cups shredded romaine lettuce
1/3 cup chopped fresh cilantro
24 flour tortillas (10-inch size)
Steps
- In blender container, combine flesh from 1 mango with yogurt, cumin and cayenne; blend until mango is pureed and sauce is well mixed. Refrigerate until ready to use.
- For dressing, in large bowl, whisk oil, lime juice, garlic powder and salt until well blended. Combine chicken and lettuce in large bowl; pour dressing over and toss to mix.
- Dice remaining 6 mangos. Fold diced mango and cilantro into chicken mixture.
- For each wrap, place 1 tortilla on work surface. Spread 1 tbsp. yogurt-mango sauce over tortilla; scoop ½ to ¾ cup chicken mixture in center. Fold up both sides of tortilla and roll up to enclose filling. Repeat with remaining tortillas. Serve remaining sauce on the side.
