Thai Milk Coffee Tenero
This soft serve creation is anything but ordinary providing the ethnic flavors of traditional Thai coffee.
Ingredients
2700g milk
200g cream
500g sugar
50g PreGel Nonfat Dry Milk (Grade A, Low Heat)
150g PreGel Fruttosa® (Water & Milk Base – Hot/Cold Process)
10g freshly ground cardamom
100g PreGel Pannacotta Traditional Paste (Cooked Cream)
200g PreGel Caffe Barista Traditional Paste (Cappuccino)
Steps
- Combine all ingredients and mix well with an immersion blender.
- Allow to age for at least 2 hours in refrigerator (age overnight for best results).
- Mix again very well with immersion blender and then pass through a strainer.
- Use as needed in soft serve machine.
