A recent collaboration between MorningStar Farms® and three-time James Beard Award-winning chef, Paul Kahan brought a limited-time offer menu item to his Chicagoland Big Star restaurant locations: the MorningStar Farms® Chorizo Taco. This taco has performed so well during its initial month-long run that MorningStar Farms® is excited to announce that the restaurant has decided to permanently add it to the menu at both locations – Wicker Park and Wrigleyville – to expand the restaurants’ veggie taco offerings.

Chef Kahan originally unveiled this exclusive recipe for the MorningStar Farms® Chorizo Taco at the MorningStar Farms® booth at the National Restaurant Association Show on May 18, treating nearly 2,000 veggie, meat and taco lovers to his delicious, new menu innovation.

MorningStar Farms® Chorizo Crumbles are a really unique and flavorful plant-based protein that cook much like real chorizo,” said Chef Kahan. “MorningStar Farms® offers a lot more than burgers – they have a versatile foodservice portfolio with 26 products making them a great culinary partner to help chefs innovate plant-based protein menu items like our MorningStar Farms® Chorizo Taco.”

The MorningStar Farms® Chorizo Taco recipe features MorningStar Farms® Chorizo Crumbles and includes pasilla salsa, frijoles charros, Oaxacan crema, green onions and cilantro wrapped in Big Star’s fresh, house-made tortilla. The taco can be made vegan by removing the Oaxacan crema.

“Chef Paul and his team demonstrated their culinary artistry with the creation of the MorningStar Farms® Chorizo Taco,” said Chef Oona Settembre, Executive Chef, Kellogg’s Specialty Channels. “MorningStar Farms® is helping chefs reimagine the veggie experience by creating products that inspire them to create menu items with a taste and texture customers prefer. We are so excited about this partnership!”

With consumers of all ages looking for opportunities to eat more plant-based meals for a variety of reasons, MorningStar Farms® allows chefs to provide more customizable, plant-based options on their menus.

Chef and partner to One Off Hospitality Group (OOH), Paul Kahan has become the nationally recognizable face of Chicago chefs. Kahan has received international acclaim for the eleven restaurants in OOH’s portfolio including Big Star, the bourbon- and tequila-focused, taco-slinging, late-night, honky-tonk venues in the heart of Chicago’s Wicker Park and Wrigleyville neighborhoods where the exclusive MorningStar Farms® Chorizo Taco is now available on the menu.

As a premium brand in The Kellogg Company portfolio, MorningStar Farms® inspires people to live well by making plant-based protein more accessible. In March 2019, MorningStar Farms® announced its commitment to converting their product portfolio to be 100 percent vegan by the end of 2021. MorningStar Farms® is currently available in nearly 25,000 foodservice locations in the U.S., including restaurants, colleges and universities, K-12 schools, and healthcare settings.
