Switch up your burger menu with this unique and flavorful duck burger with rosemary butter.
Ingredients
2 lb. ground duck meat
3 tbsp. breadcrumbs
2 tbsp. minced onions
2 tbsp. chopped parsley
2 tbsp. lemon juice
2 tbsp. Dijon mustard
1 tsp. sea salt
1 tsp. black pepper
1 tsp. minced garlic
Rosemary Butter (below)
4 focaccia buns, split
4 slices red onion
Rosemary Butter
4 oz. butter, softened
1/4 cup sour cream
1 tbsp. brown sugar
1 tbsp. lemon juice
2 tsp. Dijon mustard
1 1/2 tsp. grated lemon zest
1 tsp. fresh rosemary, finely chopped
1/2 tsp. salt
Dash hot sauce
3 tbsp. chopped parsley
Steps
- In large bowl, combine first 9 ingredients. Shape into four 1/2-in.-thick patties. Place on plate; cover and refrigerate at least 1 hr.
- Meanwhile, prepare Rosemary Butter. Divide mixture in fourths.
- On grill, cook patties until bottom side is marked; brush with 1/4 butter mixture. Flip patties; brush with another 1/4 butter mixture. Grill 5 to 7 min. or until desired doneness.
- Toast buns. Brush tops and insides with remaining butter mixture. Serve patties on buns topped with red onion slices.
Rosemary Butter
- In food processor, combine all ingredients except parsley; process until smooth. Stir in parsley.
