Several equipment companies have revisited holding technology and design. Improvements and upgrades are turning out hot foods that are pretty close to fresh-cooked.
Chefs know they can count on grapes to add refreshment to a cheese plate, color to a fruit plate or a wholesome crunch to a salad. But if you think of grapes only as a garnish, you’re missing a lot of the fruit’s culinary potential. In the hands of professional culinarians with an innovative bent, fresh grapes can go in directions you may never have imagined.
Unlike many beverages, tea has been less affected by the recent recession. Indeed, as the economic picture brightens, sales of tea products are rising. In 2010, tea imports were up 10 percent over the previous year, to a record 274 million pounds, according to estimates by the Tea Association of the U.S.A.
