Other less boozy drinks, often referred to as “sessionables,” are also trending, including those made with sake, sochu and aperol, with aperol spritzes a particularly robust category. These cocktails are especially popular with day drinkers and others who don’t want to overdo it. Plus, they adapt well to fast casuals that operate with a beer and wine license.
