We want our guests to receive the best service in town...flawless greeting scripts...impeccable plate placement...perfect pacing...a sincere thank you and invitation to return. We want our servers to deliver that first class service. But is it happening?

One of the biggest obstacles to recovering from a mistake is that we usually don't know there was a mistake. We need to make it easy for our customers to tell us how to improve.

It sounds serious, and it is. Do mistakes happen in your operation?

In retrospect, it's so clear to me. I didn't own my restaurant. My employees owned my restaurant. They didn't work for me. I worked for them. And the more you conduct your daily routine with that in mind, the more successful you'll be.

When it comes to equipment maintenance, an ounce of prevention is worth a pound of cure.

It's the perfect time of year to throw open the windows and clean out the joint. And we aren't just talking about dust bunnies! Why not schedule a house-cleaning party and garage sale?
