Disposable and recyclable bento boxes surged in popularity as a way to offer variety in one vessel. Although bento boxes originated in Japan, chefs are using them to serve cuisines from India, the Mediterranean, Mexico, the Southern U.S. and more. Operators are also sourcing more cups and boxes to hold smaller meals and snacks, and are seeking packaging that multitasks.
