Former Burger King Pres. to lead Umami Burger Group growth

The restaurant group that operates Umami Burger and 800 Degrees Neapolitan Pizzeria has named Paul Clayton, former president of Burger King and CEO of Jamba Juice, to head the company as it plans expansion into Chicago, Las Vegas and beyond.

Blenders sporting the smoothie chain’s trademark will soon appear on retailers’ shelves.

The 27-unit healthy chain with locations in Washington, D.C., New York City, Boston and Philly has the backing to expand, with the hopes of taking on Chipotle. To that end, its founders are working to turn the restaurant into a lifestyle brand, investing in schools, music festivals and more.

The nine planned units will offer menu items from both chains as early as September.

James White said he will retire as soon as a replacement can be found.

Global sales of fortified/functional beverages were projected to reach nearly $40 billion in 2005, according to Euromonitor International.

Revenues fell as the chain moves to a more asset-light model.

“Old Town Cafe” will serve as an innovation lab of sorts.

Following a test of the concept, this location introduces a new design and service model.

Management responsibilities are being realigned as part of the shift.
