Famous Dave’s gets a sister concept

The prototype for Clark Crew BBQ has opened, the first of several new concepts the company says it will unveil by Jan. 1.

For the first six weeks of Q4, off-premise business has lifted comparable sales for company units by 7%, according to parent BBQ Holdings.

The operations were sold on the brink of being closed to multiconcept operator and Famous Dave’s franchisee Ascend.

The barbecue ribs concept is trying four plant-based dishes that are traditionally made with beef or other animal proteins.

The company changed its name to accommodate the launch of Clark Crew BBQ.

The barbecue chain says to-go comps at company stores rose 6.8%, holding the decline in overall same-store sales to 0.8%. Franchisees' domestic comps rose 0.7%.

The chain's to-go and catering business has surged, while dine-in business has fallen.

The chain is replacing an existing unit with a fast-casual model, and many others could follow if it works, says RB’s The Bottom Line.
