Introducing RB’s new menu trends columnist, Nancy Kruse

Nancy Kruse, the menu maven and president of The Kruse Company, has joined the Restaurant Business team to serve as our menu trends columnist and expert.

Kruse will write a monthly column for subscribers, called “State of the Plate,” where she discusses major menu trends and other topics. You can read the first piece here, in which she writes about the Culinary Institute of America’s recent Worlds of Flavor conference.

In addition, check her out on this week’s episode of the RB podcast “A Deeper Dive,” in which she talks about the competition for salad consumers.

In addition to State of the Plate, Kruse will also write a monthly column alongside RB Editor-at-Large Peter Romeo, talking about various topics. And Kruse will contribute other times on various topics at Restaurant Business over the course of the year.

Kruse is bringing her years of experience to RB. She is well known for her State of the Plate presentations and is a former VP with RB sister company Technomic. 

The addition of Kruse is part of RB’s broadening coverage of menu topics, along with the excellent work from RB’s menu editor, Patricia Cobe.

Indeed, subscribers should be sure to check out Pat’s spectacular weekly look at new menu items, Taste Tracker. The weekly column tracks new menu items from chains and independents alike, with Pat providing important context behind the products. And Pat will continue to provide regular coverage of important menu topics every day at Restaurant Business.

Kruse also adds to RB’s growing list of columnists who provide insight on a wide variety of topics. The Bottom Line blog analyzes finance-related topics. Reality Check, from Romeo, features his take on a variety of issues, including many of the labor-related challenges that restaurants are facing at the moment.
