Cooper's Hawk names 3 new executives

The winery and restaurant chain named a CFO, CTO and chief customer officer as it looks to accelerate its growth plans.

Cooper’s Hawk Winery & Restaurants named three new executives as it looks to speed up its growth.

New to the C-suite are CFO Dawn Phillipson, Chief Customer Officer Linda Bartman and Chief Technology Officer Dave Harris. The three leaders have a wide range of experience, from furniture retailing to manufacturing to burgers and fries. 

Phillipson, the new CFO, joined Cooper’s Hawk in 2024 from Arhaus, a premium furniture store, where she was CFO. Before that, she held financial roles at Arhaus, Signet Jewelers, Veyance Technologies and Worthington Industries. 

Bartman, chief customer officer, was previously chief growth officer at SyBridge Technologies, a manufacturer of production parts and prototypes. Before that, she was president and COO of software company Uptake and has held marketing and operations roles at Trunk Club, Cars.com and CDK Global.

Harris, the chief technology officer, comes to Cooper’s Hawk after nearly six years at fast-casual burger chain Shake Shack, where he was CIO. His previous experience includes tech roles at Newell Brands, Yankee Candle, Legends and JetBlue Airways.

They’re expected to help Cooper’s Hawk not only open more restaurants but also enhance its “lifestyle brand,” said CEO and founder Tim McEnery in a statement. “They will help us create differentiated, personalized experiences while maintaining our track record as an innovator and world-class operator,” he said. 

Downers Grove, Illinois-based Cooper’s Hawk is an unusual combination of polished-casual restaurant, wine tasting room and retail shop. It is known for its Wine Club, which offers members monthly bottles and wine tastings.

It has 66 locations and has grown quickly after roaring back from the pandemic. In 2023, systemwide sales rose 19.1% and unit count rose 10.7%, according to Technomic.
