Owner Tom Holt launched Urbane Cafe in 2003 in his hometown of Ventura, Calif., after noticing a lack of sandwich-and-salad concepts in the area. The menu is based around locally sourced ingredients that are prepared fresh daily, including its fire-baked focaccia bread. Today, the chain boasts over 20 locations in California and Nevada.
