Jim and Lynn Minidis may be starting out relatively small, but their goal is to become the largest fast-casual gourmet pizza chain in the world. The couple, former Little Caesar's franchisees, decided in 1998 to strike out on their own. RedBrick has grown by double digits in each of the past three years and is now well positioned for national and international growth. RedBrick Pizza expects 103 units by year's end with master developers in nine different states. The first Canadian unit is expected to open within a few months.
