The West Palm Beach fast-casual is yet another healthy concept on the ranking. It generated sales growth last year in part because it opened four locations and now operates 19. Yet it has averaged nearly 40% sales growth over the past three years. The chain has restaurants throughout Florida.
Bolay is a fast-casual bowl concept featuring quinoa, noodles, kale or salad and proteins, along with cold-pressed juices and other beverages. Its was founded by Tim Gannon, one of the founders of Outback Steakhouse, along with his son Chris and Martin Oswald, a chef who used to work with Wolfgang Puck.
