The 31-unit quick-service brand specializes in smoothies and bowls made with fresh fruits, vegetables and toppings like granola, nuts, chia and chocolate chips. Menu items can be customized with proteins, vitamins and other mix-ins. The bowls include up to five servings of fruits and vegetables. Rush Bowls saw three-year average sales growth of 99.2% and unit growth of 117.8% during the period. The concept got its start in 2004 when founder Andrew Pudalov left a finance job in New York City for a different pace in Boulder.
