Three friends are building a fast-casual brand around oblong pizza, music, art and outrageous cinnamon rolls.

This offshoot of the full-service Tony Roma’s barbecue brand is designed for nontraditional and smaller spaces.

Here are the notable independent restaurants coming (and going) across the country in October and November.

Doug Thompson will become CEO of the five-unit brand he is buying with well-known restaurant investors Bruckman, Rosser, Sherrill & Co. and Rosser Capital Partners.

Sales at the Chicago-based chain are up double-digits this year, fueling big expansion plans.
