New York City-based Dig Inn seems to be as much of a cause as it is a fast-casual chain. The chain, which grew system sales by more than 25% last year, is a farm-to-table concept that has caught the attention of some highly regarded investors, notably restaurateur Danny Meyer. Dig Inn hopes to fuel further growth with its own delivery service. But it also boasts a farmer incubator program, which sources roughly 8 million pounds of vegetables from 80 farmers.
