Dallas-based Snappy Salads has a story familiar to many in the fast-casual realm: An executive was looking for a certain type of food and couldn't find it, so he started his own concept. In this case, however, that executive was Chris Dahlander, a former marketing director for Brinker International who wanted to provide more nutritious meals for people on the go. The result was a salad chain that has continued to grow steadily. System sales last year rose more than 23%, even though the chain added just one location.
